Why it might be time for a de-Tex

Whilst Mexican food has been growing in popularity with consumers for some time, the truth is that it isn’t really authentically Mexican.

The Trend

Most of what we think of as being Mexican food is actually ‘Tex-Mex’ which is an American invention that took certain aspects of Mexican cuisine as its inspiration but then interpreted it in a very different way from its origins. Unsurprisingly this ‘Tex-Mex’ variant has become massively popular in the UK thanks to US-owned chains making sizzling fajitas and cheesy nachos the nations’ favourite fast food. But for those looking for more genuinely authentic Mexican menu choices, options have been limited and harder to find. But things are starting to change and a new wave of chefs are changing the landscape for Mexican food by bringing authentic regional dishes to the mainstream market.

Thomasina Miers

At the forefront of this movement has been Thomasina Miers, former MasterChef champion and restaurant founder. Her chain of "Mexican market eating" restaurants Wahaca, has brought a large slice of genuine Mexico to the mainstream. From fresh, sustainable fish with a fiery green tomatillo sauce to free-range chicken in either a taquito, a quesadilla, or an enchilada, Wahaca offers an authentic alternative to the Americanised Tex-Mex approach where everything seems to be deep-fried with cheese. Wahaca’s success has in-turn led to other independents embracing this more authentic approach. As a result it’s safe to say that authentic Mexican food is finally getting the attention it deserves. But a more authentic approach to the food also requires a more authentic approach to the tableware it’s served on.
