  4. Adam Smith named Sodexo Chef Of The Year 2023

On March 20th, Adam Smith, a hospitality chef for Independents, won Sodexo Chef Of The Year 2023 at the Hotel, Restaurant and catering event held at Excel London. The annual competition consisted of Sodexo’s eight finest chefs going head-to-head in a 90 minute live cook off.

For the three dishes each chef had to create, all three had a different criteria; one vegetarian/vegan dish using two or more ingredients from future 50 foods, a main dish which includes British/Irish chicken and a classic fruit crumble with a twist using fresh Rhubarb with as little food waste as possible.

Adams winning dishes are:

  • Hawaij spiced cauliflower, pickled red cabbage, red lentil dahl, smoked paprika onion fritter.
  • Beer-glazed chicken breast, confit onion chicken ragu, smoked garlic mash, sweetcorn puree, charred hispi cabbage.
  • Custard tart, rhubarb compote, caramelised white chocolate crumble, rhubarb sorbet.
  • Adams prize included an all-expenses trip to Venice courtesy of sponsors UNOX and we're proud to announce that Lockhart Catering Equipment are treating the top 3 finalists to an exclusive chefs table dining experience in central London in early June

    The two runner ups were Anthony Dye and Ashley Bax, who both work for the corporate services. Ashley was also awarded the safety award for demonstrating safe working practices.

    Ashley Bax dishes:

  • Adzuki, Coriander and Paprika Kofte with a coconut lime yoghurt and a salad of sesame seeds, alfalfa sprouts, spring onion, chilli, red endive, maple soy lime dressing.
  • Roast chicken supreme, ballotine of thigh with port tarragon and leek, pan-roasted carrot, beetroot puree, charred leeks, turnip, jus.
  • Rhubarb Panna Cotta, ginger almond crumb, blood orange gel, apple puree, hibiscus powder.
  • Anthony Dye dishes:

  • Hoisin glazed aubergine, ‘warm’ citrus and coriander bulgur, Pak choi, coconut yoghurt, black sesame seeds.
  • Roasted red tractor chicken supreme, crispy chicken wing, red king Edward puree, buttered cavolo Nero, pickled morel mushroom, split bordelaise and sage.
  • Poached Yorkshire rhubarb, ‘warm’ stem ginger crème anglaise, whipped amaretto vanilla cream, almond crumble, apple blossom.
  • David Mulcahy, Food Innovation & Sustainability Director at Sodexo UK and Ireland, said:

    ‘Every year our chefs put their all into the competition and we want to thank them all for the time and effort they took to enter. Judging all the entries is always difficult when you have such a high calibre of chefs across the business. The eight finalists did exceptionally well to reach the final and they all excelled on the day. The pressure of a live cook off at an industry event where they have to perform as their best in front of not only some highly skilled and successful chef judges but in front of their peers too is something that will put them in good stead for future competitions as well as their day-to-day jobs. We are proud of all our finalists but huge congratulations to Adam for taking the title of Sodexo of the Year 2023.’
