The Trend
Many would argue that dessert is the best part of any meal and no one will dispute the fact that in summer, dessert is a dish best served cold. It’s also easier to put a healthy spin on a chilled dessert (e.g. lemon ice) for health-conscious customers.
The obvious benefit of chilled desserts is that operators can use their fridge or freezer to do most of the work in creating these refreshing treats. But that also means that operators need to take good care in chilling the desserts properly in order to avoid the risk of growing any harmful bacteria around these items.
Legal Requirements
Effective chilling means the fridge or display cabinet needs to be kept at a temperature between 1°C - 5°C (for the former) and 1°C - 8°C (for the latter) - the legal requirement in England, Wales and Northern Ireland. So, operators must ensure they have the right type of equipment in order to tick all the boxes and comply fully.
